Crispy Cheese Croquettes

Golden and crunchy on the outside, with a soft, creamy cheese centre. Perfect as a starter, snack, or part of a sharing platter.

Ingredients

For the croquettes:

  • 50g butter

  • 60g plain flour

  • 300ml whole milk

  • 150g mature cheddar cheese, grated

  • 50g mozzarella, grated

  • 1 teaspoon Dijon mustard

  • ½ teaspoon garlic powder

  • Salt and black pepper

  • 1 tablespoon chopped fresh parsley

For the coating:

  • 80g plain flour

  • 2 eggs, beaten

  • 150g breadcrumbs or panko breadcrumbs

  • Vegetable oil, for frying

For the garlic aioli:

  • 4 tablespoons mayonnaise

  • 1 small garlic clove, finely grated

  • 1 teaspoon lemon juice

  • Salt and black pepper

Method

  1. Melt the butter in a saucepan over a medium heat.

  2. Add the flour and stir continuously for one to two minutes to create a smooth paste.

  3. Gradually pour in the milk, whisking continuously until the mixture becomes thick and smooth.

  4. Reduce the heat and add the cheddar, mozzarella, Dijon mustard, garlic powder, parsley, salt, and black pepper.

  5. Stir until the cheese has completely melted and the mixture is thick enough to hold its shape.

  6. Transfer the mixture to a bowl, cover it, and refrigerate for at least two hours, or until completely firm.

  7. Once chilled, divide the mixture into equal portions and roll each portion into a ball or small cylinder.

  8. Place the flour, beaten eggs, and breadcrumbs into three separate bowls.

  9. Coat each croquette in flour, then dip it into the beaten egg before covering it completely in breadcrumbs.

  10. For an extra-crispy coating, dip each croquette into the egg and breadcrumbs for a second time.

  11. Heat the vegetable oil to approximately 175°C.

  12. Fry the croquettes in small batches for two to three minutes, or until crisp and golden brown.

  13. Carefully remove them from the oil and place them onto kitchen paper to drain.

  14. Mix all the garlic aioli ingredients together in a small bowl.

  15. Serve the croquettes hot with the garlic aioli.

Chef’s Tip

Chill the coated croquettes for another 20–30 minutes before frying. This helps them hold their shape and prevents the cheese filling from escaping.

Cooking time: 15 minutes

Makes: Approximately 10–12 croquettes
